Since we eat a lot of corn products around here, I am adamant that we only eat organic corn. I know the science is still out on GMO’s, but I avoid them as much as I can. I just prefer my food to not be messed with in a lab. I’ve realized that it is much easier to get organic polenta in log form than it is to get in loose form:
I was craving a meatball sub (or wedge or grinder or whatever you call in in your part of the world), and I wanted something fry-like, but not actual fries on the side. I made polenta fries instead and they were delicious!
1 polenta log
parmesan cheese (freshly grated is best)
Preheat oven to 400 degrees.
Cut log in half, and then cut into thin strips. Spray baking sheet with cooking spray, place polenta on baking sheet, and drizzle with more oil, parmesan cheese, and salt. Bake in oven for 25-30 minutes.
