Cauliflower Buffalo “Wings” with Homemade Blue Cheese Dressing

Buffalo chicken wings are in my top five favorite foods (pizza, meatballs, tacos, and beef Wellington round out the list- healthy, I know.)  But when I really think about it, it’s not the actual chicken that I love, it’s the buffalo sauce. So hallelujah, I discovered I can roast cauliflower, throw some sauce on it, dip it in blue cheese and fulfill all my chicken wing needs while getting a serving of vegetables. AND, if you want to be ambitious, you can make your own blue cheese dressing from scratch. Sometimes I do, sometimes I buy yogurt based blue cheese dressing and tell myself that I am getting probiotics while I gorge.


  • 1 head cauliflower, chopped into florets (frozen florets work too)

  • Buffalo sauce (I like Frank’s)

  • Oil

  • Pinch of salt


  1. Preheat oven to 450 degrees. Toss with oil and roast cauliflower for 15 minutes or so, turning 2-3 times, until lightly browned

  2. Drizzle with buffalo sauce.

  3. Enjoy!
