Deconstructed Caesar Salad

My mom is the best. She got up with me at 3:30 in the morning when I was having an asthma attack, and now she is making me gluten free chicken parm and chocolate chip cookies. So much for no sugar or dairy during the week! But like I said, if it is offered to me, I’m not turning it down. That’s just crazy.

I am officially on vacation:

I am doing very little cooking, but I don’t want to neglect my blog so I dug out this oldie but goodie. I am one of the only people I know or who will openly admit that they love sardines. I also love Caesar salad, but I find the amount of dressing a bit too much. I make this deconstructed version instead.

2 cups chopped romaine
2 sardines
1 hard-boiled egg
1 tablespoon grated parmesan
1/2 cup GF croutons
1 tablespoon olive oil
1/2 tablespoon lemon juice

Combine all ingredients
