Chocolate Peanut Butter Squares

Ok, I realize I am not helping anyone with their post-holiday cleanse by posting recipes like this, but I’ve been sorting through really old recipes that I have never posted before, and I came across this. I had blog way back that included my adventures in dating and it is hilarious. Here is what I wrote back in 2008:

“If I am still single at 35, I full on plan on becoming a cougar. I am 30 years old,  I weigh the same as I did when I was 17, I work in Wellesley and get asked on a regular basis if I go to Wellesley College, and I got carded three times this year buying scratch tickets.” Well, I met my fiancé at 35, and he is 5 years younger than me so prophecy fulfilled! Oh, and these  chocolate peanut butter squares are AMAZING. I may add bacon and make these for my annual bacon and bourbon party in a month.

  • 1 cup butter
  • 4 cups confectioners’ sugar
  • 2 cups peanut butter
  • 1 1/2 cups GF graham crackers
  • 1/2 cup of butter
  • 1 cup semi-sweet chocolate chips

Melt 1 cup of butter over low heat. Remove from heat and stir in confectioner’s sugar, peanut butter, and graham cracker crumbs. Spread mixture in a 8X8 or 9X9 casserole dish  , and pat down evenly.

To make topping: Melt together 1/2 cup f butter with one cup of chocolate chips. Spread this mixture over peanut butter mixture. Refrigerate at least a 1/2 hour and cut into squares.
