Sometimes you buy too many yams, and you just can’t stand the thought of rotisserie chicken and yam fries again, so you get creative. I threw this together the other night, and there were no leftovers! *I used brown rice instead of quinoa in the pictured version. Both versions are tasty.
- 3/4 cup dried quinoa
- 1 can black beans
- 2 yams, diced
- 2 chicken breasts or steak, diced
- taco seasoning (I used Trader Joe’s)
Prepare quinoa according to package instructions. Drain beans and add to quinoa when it is done. Season with salt and pepper. Heat oil in skillet and add diced yams. Once tender, add diced meat and taco seasoning. Spoon over quinoa mixture and top with a dollop of guacamole.
