Blueberry Kale Smoothie

I’ve been getting kale in my farm share for three weeks now (probably because I gave specific instructions: no collard greens!). I’ve made a dip, and put it in spaghetti sauce, but I am running out of ideas. I decided to jump on the bandwagon and put it in a smoothie. I was skeptical, not because I don’t like the taste of raw kale, but because I didn’t think my blender would break it down enough. I was pleasantly surprised at how good this was, and at how well my blender did. I’ve been off for two weeks now, and I report back to school tomorrow. This smoothie is part of my “stop drinking so much wine and be a responsible adult with a job” program. No wine tonight! That’s going to be really hard because Bachelor in Paradise is on.

  • 1/2 cup frozen or fresh blueberries
  • 1 ripe banana
  • 1 big handful of chopped kale
  • 1/2 cup almond milk (or whatever your milk of choice is)
  • 1 cup plain Greek yogurt
  • A bit of agave nectar (I ended up not putting it in because it was sweet enough for me)

Blend all ingredients together.
