Salsa Verde

When I had a Waltham farm share, we would get 1-3 tomatillos at a time, and it was never enough to make salsa verde.  I would try to supplement with some from the farmer’s market, but they were outrageously expensive.  I was at Russo’s today and I noticed they were $1.49/lb. I bought almost the entire basket, and finally made my own salsa verde. I loved it!


  • 1 1/2 lb tomatillos
  • 1/2 cup chopped white onion
  • 1/2 cup cilantro leaves
  • 1 Tbsp fresh lime juice
  • 1/4 teaspoon sugar
  • 2 Jalapeño peppers
  • Salt to taste

De-husk tomatillos, cut in half and place flat side down on a foil lined baking sheet. Broil for about 7 minutes or until they start to char.  Let cool, and place in a food processor with remaining ingredients.  Place in the fridge for at least an hour and enjoy.
