When I worked at the upscale kitchen store which shall remain unnamed, people used to go bananas over the peppermint bark. When we sold out of it a few days before Christmas, people would tell us that we ruined Christmas because peppermint bark is part of their family tradition. When I worked there, it was $24 a tin, I am pretty sure they have raised the price since then. I decided to try and make it myself, and I had much success. I give this for gifts, and it is a big hit. *2014 UPDATE: Market Basket carries pre crushed candy canes which made this soooo much easier.
- 12 oz. dark chocolate (you can use milk chocolate too)
- 12 oz. white chocolate
- 1 tsp peppermint extract
- crushed candy canes or mints
Line a jelly roll pan with wax or parchment paper. Melt dark chocolate over in a double boiler. Remove from heat and mix in peppermint extract. Spread on lined pan and place in refrigerator until hardened. Melt white chocolate in double boiler and spread over hardened dark chocolate. Sprinkle with crushed mints or candy canes and place in fridge until hardened. Break into pieces and watch people go crazy over something so easy to make.
