Refrigerator Pickles (Small Batch)

I was so excited to go to the farmers market last weekend and find pickling cukes for $1 per pound.  I would have bought tons, but I didn’t have all my pickling supplies put together yet.  I made one big jar of my family’s traditional pickles, and I had one cuke left. It was just enough for one small jar of refrigerator pickles, which I will break out at the post-triathlon BBQ I am hosting this weekend. You can multiply the recipe based on how many jars you want to make.


  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tsp pickling salt
  • a clove or two of garlic
  • a pinch of red pepper flakes
  • a few sprigs of fresh dill
  • 1 pickling cuke
  • 1 small mason jar

Bring first three ingredients to a simmer on the stove top.  Pack remaining ingredients into a clean jar. Pour (carefully) liquid into into jar and cover.  Let jar return to room temperature and place in fridge for 48 hours before serving.
