Millet and Lentil Salad with Feta

I like to cook with millet because it reminds me of the word “mullet.” I think about mulletsgalore.com started out as a funny website and then got really wierd. This salad came out excellent.

  • 1/2 cup millet
  • 1 cucumber diced
  • 1/2 crumbed feta
  • 1/2 cup dried lentils
  • 1/2 tsp cayenne pepper
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • salt and pepper

Cook millet and lentils according to package instructions.  After draining lentils, sprinkle with a little bit of the red wine vinegar (they absorb the flavor when hot). Let cool and combine with remaining ingredients.
