I like to eat dip as a meal. If you think about it, eating plain Greek yogurt with kale in it is considerably more healthy than eating a yogurt with 20 grams of sugar in it. Plus I dip carrots and green beans into it (and sometimes potato chips.) I made this last week as part of my lunches. Kale was my farmers market pick of the week. headed back this morning to get some cabbage to make sauerkraut!
- 1/2 head of kale, chopped
- 1 16 oz container Greek yogurt (or sour cream)
- 1 package vegetable dip mix
Steam or boil kale for 10 minutes. Drain and let cool. Mix with remaining ingredients in a bowl, and chill for at least 4 hours before serving.
