This would have been a low sugar dessert had I not added the white chocolate chips, but I had a 1/4 cup left and the Pope just declared that wasting food is like stealing from the poor so I felt guilty. This is very versatile- add whatever you like.
- 6oz dark chocolate chips
- handful dried cranberries
- 4 tbsp quinoa
- handful peanuts, chopped
- handful white chocolate chips
Melt chocolate over double boiler, stirring frequently. Meanwhile, roast quinoa in a dry frying pan, shaking frequently, and keeping a close eye to make sure they do not burn. When chocolate is melted, spread over a waxpaper on a baking sheet. Sprinkle remaining ingredients over chocolate, and place in freezer until hard, about 10 minutes.
