Ugh, I should have posted my guacamole recipe during Super Bowl week, but I was way into blue cheese that week. As I’ve mentioned before, I am craving vegetables hard core during this marathon training.  It’s good and bad.  Obvi, veggies are good for you, but they do not have quite the amount of calories I need after burning 1,000+ calories every Sunday.  So, when I walked by the avocados in the store today, and saw they were on sale, I had to make guacamole- veggies with more calories.  Everyone has their go-to guac recipe, and here is mine. And here is my post from my old blog:

“I decided to make guacamole. Here is the synopsis of what happened: As I was cutting the jalapeno, juice squirted me in the eye. I instinctively rubbed my eye with my hand that was covered in jalapeno juice, touching the part of my face where I got a little sunburnt yesterday. I went to the bathroom to rinse my face off, but as I splashed my face with water I was just getting more jalapeno juice on my burnt face. So I had to finish chopping the jalapeno with closed eyes, then jump in the shower to get it off my hands and face with a wash cloth. Was the guacamole worth all this? You betcha.”

  • 2 avocados
  • 2 Roma tomatoes, chopped
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 1 lime
  • 1 jalapeno
Combine avocado with onion, garlic, and pepper. Mash to desired consistency. Add juice of lime, and fold in tomatoes. Season with salt and pepper.
