Buffalo Cauliflower Florets

I like to develop my own recipes as much as possible, but I couldn’t help but notice over the past week that people were pinning baked buffalo cauliflower as a Superbowl snack. I had to get on board and make these in addition to buffalo wings.  Since the Pats are not in the Superbowl, I might as well eat my feelings. Instead of hot sauce and canola oil, I used Frank’s Buffalo sauce.  (I would like to point out that the author of the blog I got this idea from states that she created this  because she was craving buffalo wings.  I can’t even tell you how many times I read vegan blogs and they talk about craving meat.  Isn’t your body trying to tell you something? I digress.) Of course, I dipped them in blue cheese dressing because I am training for a marathon and the consolation for running a gazillion miles every week is that I can what I want.  Going back to low-fat in May is going to be rough.

  • 1 head cauliflower
  • Buffalo sauce (I like Frank’s)
  • Oil
  • Pinch of salt
  1. Preheat oven to 450 degrees. Toss with oil and roast cauliflower for 15 minutes or so until lightly browned
  2. Drizzle with buffalo sauce.
  3. Enjoy!
