Buffalo Chicken Dip

It is the most wonderful time of the year- NFL playoffs.  Next weekend, after I run 12 miles, I will be watching my beloved Patriots take on the Houston Texans. I’m dedicating this week to GF football party foods.

I got this recipe at a work potluck a few months ago.  I asked my boss for the recipe and then I gave my notice. I had to get this first- I have priorities! I usually use Frank’s Buffalo sauce, which is GF.  Carrots, celery, and corn chips are excellent for dipping.

  • 2-3 chicken breasts, cut into pieces
  • 1 cup ranch dressing
  • 1 cup buffalo wing sauce
  • 16 oz. cream cheese
  • 16 oz. shredded cheddar
  • Pepto bismal /your cell phone ready to 911 for the impending heartburn/cardiac arrest you will experience after eating this.In your slow cooker, combine  chicken breasts with 1 cup ranch dressing and 1 cup Buffalo wing sauce.  Cook on high for 2-3 hours.  Add 16 oz cream cheese and cook 1 hour on low. Add 16oz shredded cheddar cheese and cook on low until melted.
